Zwilling Miyabi 5000MCD Rocking Santoku 18 cm is the counterpart to the European chef's knife and universally applicable. It is suitable for mincing meat, vegetables and fish. The high, squat CRYODUR blade is sanded on both sides and was hardened in a specially developed process - making it particularly robust and sharp. The 18 cm long blade consists of a particularly hard MicroCarbide powder steel MC63 core surrounded by 100 layers of steel. It is processed with the classic Japanese Honbazuke trigger, resulting in a particular sharpness that glides effortlessly through ingredients. The Santoku's handle is made of Masur birch to give each knife a unique wood-grain pattern. An end cap and subtly styled mosaic pin complete the knife's elegant look. The handle is D-shaped to give the knife perfect balance and control for effortless and precision cutting. Santoku Naoki Mazaki NM-1309 with 16,5cm blade. The blade made of Shirogami #2 steel, with hardness 62-63HRC. Handle made of ash and quince. Handmade in Japan. Masaki-san, a blacksmith from Sanjo, is relatively young, he hails from the island of Hokkaido. A young man with no definite direction in life, he set off on his motorcycle across Japan. When he stayed in Sanjo, he was fascinated by the local blacksmithing and knife business. After about five years of apprenticeship with Yoshikane, he decided that he would prefer a more traditional, practical approach to creating knives.
Masaki-san prefers to use the more traditional Shirogami #2 to make his knives, and he often finishes many of his blades, giving them a rustic look. Shirogami has incredible cutting edge durability and sharpness.

This handmade R2 santoku has an incredible level of finish and polish, with Kurosaki's signature "Shizuku" Tsuchime patterns that are both aesthetically pleasing and functional. Octagon handle is made of oak wood. Wash and dry with a soft sponge, and safely store after use. Avoid cutting into bones, frozen foods, hard fruit pits.
