Japanese Edosaki knife from the Tokujo series by Sakai Takayuki. The Edosaki is a special Japanese Unagisaki knife for filleting eel, originating from the Kantō region. Its unique blade shape – a sharp, elongated tip – is ideal for precise and precise filleting of fish while preserving the tender texture of the meat. This design was developed specifically for the traditional Eastern Japanese eel filleting technique "from the back". Although the Edosaki is designed for eel, it is also excellent for filleting other fish species. This knife is handy for skinning, filleting and delicate cutting, ensuring a clean cut.
