A Japanese chef's knife crafted in the Gihei Hamono workshop. The 180 mm blade is suitable for most cooking tasks. Compared to European chef's knives, the gyuto has a thinner, lighter blade and is lighter in weight. The blade of the Gihei Hamono gyuto knife is forged from HAP 40 steel and additionally protected by stainless steel scales. This three-layer construction is called Sanmai and is typical of most Japanese kitchen knives. The WA-style handle, crafted from magnolia wood and equipped with a buffalo bolster, is traditionally Japanese. It is not dishwasher safe.
