It's ideal for thin slicing, carpaccio, filleting, and other tasks. The 24 cm blade is crafted from premium Ginsan steel, surrounded by stainless steel sheaths. The handle is crafted from ebony, which is known for its strength, durability, and pleasant texture. The knife weighs 280 g. Like all Japanese kitchen knives, this slicer requires careful handling: it is not intended for slicing frozen foods or bones, and it is not recommended to wash in the dishwasher.
