As I expected from my experience with other TOJIRO knives, F-845 has a very sharp blade, with excellent edge retention, which cuts anything effortlessly.It is perfect for what I needed, i.e. a longer knife for cutting meat and larger vegetables, but which I do not use very frequently, so a cheaper model was appropriate.The kind of stainless steel handle used in the TOJIRO PRO knives is very comfortable, but someone who would want to use this knife must keep in mind that the handle of the petty knives is narrower than the handle of the heavier knives.Because of that, the petty knives like F-845 would be less comfortable if you would use them continuously for many hours. For such an intensive usage, a knife with a thicker handle, like the carving knife TOJIRO PRO F-896, which obviously is heavier and more expensive, would be the right choice.
