The Santoku knife from the house of Miyabi has a sharpness of approximately 63 Rockwell and is suitable for cutting meat, fish and vegetables. The dark wooden handle is comfortable to hold thanks to its ergonomic shape, and allows effortless progress. The blade’s pattern, cutting properties, durability and toughness are impressive. The material used allows fast cleaning in the dishwasher.
The manufacturer has paid attention to an authentic Japanese blade profile, which is decorated with a hammered look. The core of the blade is made of micro carbide, wrapped with two layers of steel. Double-sided grinding and the Honbazuke edge of the blade perfects the sharpness of the 18 cm Miyabi Santoku knife.
The handle is made of tough dark cocobolo pakka wood. A goose neck curved handle allows easy working. Le couteau de la série Santoku 9503 Zuiun Kiwami de Seki Kanetsugu a un design impressionnant et est fabriqué à partir de matériaux de la plus haute qualité Le Zuiun est un modèle spécial fabriqué pour célébrer le centenaire de l'entreprise. Les couteaux Seki Kanetsugu Zuiun ont des lames avec un motif « hamon ». Dans son incarnation actuelle, Seki Kanetsugu Cutlery fabrique des lames modernes qui présentent les caractéristiques des épées japonaises : incassables, inflexibles et très tranchantes. La société a également insufflé au Zuiun l’esprit de ces épées. La lame est fabriquée selon la technique San Mai, où le noyau est en acier poudré rapide SPG2 (Super Powder Gold 2) et recouvert de damas 62 couches. Le revêtement de lame DLC (Diamond Like Carbon) est une fine couche appliquée sur la surface pour améliorer les propriétés du couteau. Le traitement de surface augmente la résistance à l'usure et à l'abrasion. Finement affûtée par des artisans, la surface de la lame présente un motif semblable à un nuage. Il est également forgé dans une lame "hamaguri-ba" en forme de V, reflétant une caractéristique des épées japonaises. MIYABI 5000 FCD Santoku, 18cm blade length. This Japanese santoku has a hard fine carbide steel core for very good cutting edge retention and sharpness. Santoku translates as "Three Virtues", these being meat, fish and vegetables. The flat cutting edge lends itself to a chopping motion rather than the rocking cutting movement of European chef's knives. The blade core is surrounded by 48 outer layers of steel which make up the unique Damascus-design pattern on the blade. The cutting edge is Honbazuke-honed and symmetrical (not single bevel), so can be used by those both right and left-handed. There is no finger guard so the whole length of the cutting edge can be used. The handle and half-bolster join seamlessly for comfortable use. The smooth surface helps to prevent the formation of calluses on the thumb and forefinger. Hand wash only for best care, and maintain and sharpen using a whetstone.
