Mcusta Zanmai Beyond
Mcusta Zanmai Beyond knives are a premium series of Japanese kitchen knives, combining traditional Japanese craftsmanship with modern technology. The series name “Beyond” reflects Mcusta’s goal to go beyond traditional standards.
The main feature of the Beyond series is the use of Aogami Super (Super Blue Steel) high-carbon steel in the core of the blade. Thanks to its composition, which includes carbon, chromium, vanadium, and tungsten, this steel maintains exceptional sharpness for a long time and is easy to sharpen. To protect the thin high-carbon core, the blade is constructed using the San Mai (three-layer) technique, with outer layers made of stainless steel. Blade hardness reaches 63–65 HRC.
The octagonal Wa Bocho-style handle is made of hinoki wood, a Japanese cypress known for its light weight and strength. Hinoki is very pleasant to the touch and has a subtle citrus aroma that fades over time. Handles are decorated with a mosaic pin and a red akamaki ring, adding elegance and emphasizing the premium nature of the Mcusta Zanmai Beyond series.
