Le couteau de chef classique a une construction à soie complète ou la soie atteint l'extrémité du manche. Cela rend non seulement le couteau durable, mais assure également un bon équilibre. Parfois, le talon du couteau de chef est protégé par une sorte de butée. Cela empêche les coupures potentielles en empêchant le doigt de glisser sur le talon tranchant. En règle générale, les couteaux de ce design sont préférés par les cuisiniers débutants.

L'épaisseur du couteau de chef européen est généralement de 2 à 5 mm. Son poids varie de 170 à 300 grammes. Malgré le fait que de nombreux fabricants indiquent sur l'emballage que le couteau peut être lavé au lave-vaisselle, nous ne le recommandons pas. Le lavage au lave-vaisselle endommage le manche et émousse rapidement le tranchant.
