Das Kiritsuke Tojiro DP Cobalt Alloy VG10 F-796 ist ein Hybrid, der für zahlreiche Schneidarbeiten verwendet werden kann. Es ähnelt stark einem Santoku, ist aber vom Klingenprofil auch an ein Gyuto/Kochmesser angelehnt. Dazu kann man mit der Spitze im umgekehrten Tanto-Profil perfekt Fleisch aufschlitzen, sowie diverse Zierschnitte an Obst und Gemüse durchführen. Hacken funktioniert mit diesem Messer genauso gut wie ein Wiegeschnitt.Die rostfreie Klinge besteht aus einem 3 Lagen Stahl mit einer harten VG-10 Kernlage (60 HRC), die wiederum für die langanhaltende Schärfe (Schnitthaltigkeit) verantwortlich ist. Die äußeren Schichten bestehen aus rostfreiem, mit 13% Chrom legiertem Stahl. Dieser weichere Stahl schützt die harte Kernschicht.
